Dragonfruit Lemonade

1 cup fresh dragonfruit (pitaya) purรฉe (from about 2 ripe dragonfruits, pink variety preferred for color)

about 5โ€“6 lemons, for muddling

ยฝ cup sugar (or honey, to taste)

4 cups cold water (still or sparkling)

Ice cubes

Lemon slices & mint leaves (for garnish)

Dragonfruit cubes for garnish

1. Make lemon juice:

Cut lemons into 8 pieces and muddle them for about 3 minutes or until each lemon looks squeezed out.
2. Make dragonfruit purรฉe:
Scoop the flesh from dragonfruits and blend until smooth. Strain if desired for a smoother texture.


3. Mix lemonade:
In a large pitcher, whisk together dragonfruit purรฉe, lemon juice, sugar, and water until well combined. Adjust sweetness to taste.


4. Chill & serve:
Add plenty of ice. Garnish your glass with lemon slices, mint leaves, or extra dragonfruit chunks for a fun twist.
