1 large egg white
1 Tbsp water
1 tsp vanilla extract
4 cups raw nuts (almonds, pecans, cashews, walnuts, or a mix)
1 cup granulated sugar
1 Tbsp ground cinnamon
1 tsp salt

Step 1: Prep the Oven
Preheat oven to 300°F (150°C).
Line a large baking sheet with parchment paper.
Step 2: Whisk the Egg White
In a large bowl, whisk the egg white, water, and vanilla until frothy.
Step 3: Coat the Nuts
Add nuts to the bowl and stir until evenly coated.
Step 4: Mix the Sugar & Spice
In a separate small bowl, mix sugar, cinnamon, and salt.
Sprinkle over nuts and toss to coat evenly.
Step 5: Roast
Spread nuts in a single layer on prepared baking sheet.
Roast 40–45 minutes, stirring every 15 minutes so they roast evenly.
Step 6: Cool & Serve
Let nuts cool completely on the sheet. They’ll crisp up as they cool.
Store in an airtight container for up to 2 weeks.
