Ranch-Style Beans with Chorizo, Ham & Bacon

A rich, smoky, slightly spicy pot of beans simmered low and slow with meats, peppers, and a touch of cheese. Perfect as a side dish or served with warm tortillas and rice for a full meal.




๐Ÿ›’ Ingredients (Serves 6โ€“8)

2 cups dried pinto beans, rinsed and soaked overnight (or 3 cans, drained and rinsed for a shortcut)

4 oz Mexican chorizo

4 oz ham, diced

4 strips bacon, chopped

2 serrano peppers, finely chopped (leave seeds for heat, remove for milder)

1 large tomato, diced (or 1 cup canned crushed tomatoes)

1 medium onion, diced

3 cloves garlic, minced

4 cups chicken or beef broth (or water, if preferred)

1 tsp ground cumin

1 tsp smoked paprika (optional, enhances the smokiness)

Salt & pepper, to taste

ยฝ cup cheese, crumbled or shredded for garnish(queso fresco or Monterey Jack work well)

Fresh cilantro, for garnish (optional)

Step 1: Prepare the Beans

If using dried beans: Drain soaked beans and add them to a large pot with fresh water. Simmer for about 1โ€“1.5 hours until tender but not falling apart. Drain and set aside.

If using canned beans: Skip this step.


Step 2: Cook the Meats

In a large Dutch oven or heavy pot, cook the chopped bacon over medium heat until crispy. Remove with a slotted spoon and set aside.

In the bacon fat, cook the chorizo until browned, then add in the diced ham. Cook together 4โ€“5 minutes until lightly caramelized.


Step 3: Build the Base

Add onion, serranos, and garlic to the pot. Sautรฉ 3โ€“4 minutes until softened.

Stir in diced tomato, cumin, smoked paprika, salt, and pepper. Cook down 5 minutes until it forms a thick base.


Step 4: Simmer the Beans

Add cooked (or canned) pinto beans to the pot.

Pour in broth until beans are just covered. Stir well.

Simmer uncovered 20โ€“30 minutes, stirring occasionally, until flavors deepen and liquid thickens slightly.


Step 5: Finish & Serve

Stir in crispy bacon. Adjust seasoning to taste.

Serve hot, topped with a sprinkle of light cheese and fresh cilantro.
