Ingredients (Makes ~24 cookies)
½ cup (115g) salted butter, softened
½ cup (100g) granulated sugar
½ cup (100g) brown sugar, packed
1 large egg
1 teaspoon vanilla extract
1 ½ cups (190g) all-purpose flour
½ teaspoon baking soda
¼ teaspoon baking powder
1 cup cream cheese baking chips (or white chocolate chips if you can’t find them)
¾ cup fresh berries (our freeze-dried berries work great too!)
Instructions
1. Heat to 350°F (175°C). Line two baking sheets with parchment paper.
2. Beat butter, granulated sugar, and brown sugar together until fluffy (about 2 minutes).
3.Mix in the egg and vanilla until smooth.
4. In a separate bowl, whisk flour, baking soda, baking powder, and salt. Gradually add to wet mixture, mixing until just combined.
5. Gently fold in cream cheese chips and berries. (If using fresh berries, don’t overmix — they’ll streak the dough beautifully.)
6. Scoop 2-tablespoon mounds of dough onto baking sheets, spacing 2 inches apart.Bake 10–12 minutes, until edges are lightly golden and centers look just set.
7. Let rest on baking sheet 5 minutes before transferring to a wire rack.
Tips & Variations
For softer cookies: Chill dough for 30 minutes before baking.
Press a few extra chips and berry halves on top right before baking. When I don’t have brown sugar, I will just substitute the amount for white sugar to save the trip.
