Crêpes Recipe

One of the easiest recipes to whip first thing in the morning for the kiddos. French crêpes are light, buttery, and endlessly versatile. Whether filled with Nutella and strawberries or ham and cheese, they’re a staple in French kitchens and a delightful treat for breakfast, brunch, or dessert.

🛒 Ingredients (makes 12–14 crêpes)

1 cup (125 g) all-purpose flour

2 large eggs

1 ¼ cups (300 ml) whole milk

2 tbsp unsalted butter, melted (plus more for the pan)

1 tbsp sugar (optional, for sweet crêpes)

1 tsp vanilla extract (optional, for sweet crêpes)

Pinch of salt

👩‍🍳 Instructions

1. Make the Batter – In a large mixing bowl, whisk together flour and salt. In a separate bowl, whisk eggs, milk, melted butter, (plus sugar and vanilla if making sweet crêpes). Slowly pour wet ingredients into dry, whisking until smooth. The batter should be thin, like heavy cream.

Tip: Let the batter rest at least 30 minutes at room temperature (or up to overnight in the fridge) for the best texture.

2. Cook the Crêpes – Heat a non-stick skillet or crêpe pan over medium heat. Lightly butter the pan. Pour about ¼ cup batter into the center, swirling quickly to spread it thin and even.

3. Flip & Finish – Cook 1–2 minutes until edges lift easily, then flip and cook another 30–60 seconds. Stack on a plate, covering with a clean towel to keep warm.

4. Serve – Fill with your favorite toppings—sweet (Nutella, jam, berries, powdered sugar) or savory (ham, cheese, spinach, eggs). Fold or roll and enjoy!

🌟 Tips & Variations

Savory crêpes (Galettes): Skip sugar & vanilla. Use buckwheat flour for an authentic Breton-style crêpe.

Make ahead: Cooked crêpes can be stacked, wrapped, and stored in the fridge for 2 days or frozen up to 2 months.

Reheating: Warm gently in a skillet or microwave, or serve at room temp.

Fancy touch: Add a splash of Grand Marnier or rum to the batter for a French patisserie-style crêpe.

✨ These crêpes are light, buttery, and endlessly customizable—perfect for a Sunday brunch spread or a cozy dessert night.
