
Beefy Grilled Cheese Sandwiches
Ingredients
1 lb ground beef
1 Tbsp olive oil
1 small onion, finely diced
2 garlic cloves, minced
1 Tbsp Worcestershire sauce
½ tsp smoked paprika (optional)
Salt & pepper, to taste
8 slices thick-cut bread (sourdough or Texas toast works great)
8 slices cheddar cheese (or mix with provolone, mozzarella, or pepper jack)
4 Tbsp butter, softened
Instructions
1. Cook the beef: In a skillet over medium heat, warm olive oil. Add onion and cook 2–3 minutes until softened. Stir in garlic, then add ground beef. Cook until browned, breaking it into crumbles. Drain excess grease.
2. Season: Stir in Worcestershire sauce, smoked paprika, salt, and pepper. Simmer 1–2 minutes, then remove from heat.
3. Assemble sandwiches: Butter one side of each bread slice. Place one slice, butter side down, on a skillet. Layer with cheese, a scoop of beef mixture, another slice of cheese, then top with bread (butter side up).
4. Grill: Cook on medium-low heat until bread is golden brown and cheese is melty, about 3–4 minutes per side. Press gently with a spatula for extra crispiness.
5. Serve hot with pickles, tomato soup, or fries.
