Beefy Grilled Cheese Sandwiches

Ingredients

1 lb ground beef

1 Tbsp olive oil

1 small onion, finely diced

2 garlic cloves, minced

1 Tbsp Worcestershire sauce

ยฝ tsp smoked paprika (optional)

Salt & pepper, to taste

8 slices thick-cut bread (sourdough or Texas toast works great)

8 slices cheddar cheese (or mix with provolone, mozzarella, or pepper jack)

4 Tbsp butter, softened


Instructions

1. Cook the beef: In a skillet over medium heat, warm olive oil. Add onion and cook 2โ€“3 minutes until softened. Stir in garlic, then add ground beef. Cook until browned, breaking it into crumbles. Drain excess grease.


2. Season: Stir in Worcestershire sauce, smoked paprika, salt, and pepper. Simmer 1โ€“2 minutes, then remove from heat.


3. Assemble sandwiches: Butter one side of each bread slice. Place one slice, butter side down, on a skillet. Layer with cheese, a scoop of beef mixture, another slice of cheese, then top with bread (butter side up).


4. Grill: Cook on medium-low heat until bread is golden brown and cheese is melty, about 3โ€“4 minutes per side. Press gently with a spatula for extra crispiness.


5. Serve hot with pickles, tomato soup, or fries.
